INGREDIENTS
- 1 cup chopped frozen spinach
- eggs*
- 1 pat of butter
- 2 corn tortillas
- shredded cheese (mexican blend)
*1 whole egg plus 1 egg white or 3 egg whites
METHOD
- Defrost spinach in a pan and add butter.
- Add eggs and scramble together. Move to one side of pan and sprinkle cheese one top.
- Warm up tortillas on empty side of pan.
- When the tortillas are warmed up to your liking, put the egg/spinach/cheese mixture inside of them and bon appetit!
I did not add any salt because frankly I dont think it needs any, the cheese and butter makes it savory enough, and too much sodium is bad for you and makes you bloated! I hope you enjoy it :-)
