The Breakfast Joy Taco

This recipe was inspired by my BFF Amy who is allergic to gluten. Its a iron packed, protein jammed delicious way to start your day! And it is very easy with no prep work!

INGREDIENTS

  • 1 cup chopped frozen spinach
  • eggs*
  • 1 pat of butter
  • 2 corn tortillas
  • shredded cheese (mexican blend)


*1 whole egg plus 1 egg white or 3 egg whites


METHOD


  1. Defrost spinach in a pan and add butter.
  2. Add eggs and scramble together. Move to one side of pan and sprinkle cheese one top.
  3. Warm up tortillas on empty side of pan.
  4. When the tortillas are warmed up to your liking, put the egg/spinach/cheese mixture inside of them and bon appetit!

I did not add any salt because frankly I dont think it needs any, the cheese and butter makes it savory enough, and too much sodium is bad for you and makes you bloated! I hope you enjoy it :-)

Caramel Apples Squares

This recipe is an altered version of something Paula Deen concocted. I cut the butter and sugar in half, and added butterscotch chips!!!



Ingredients:


  • .5 cup water
  • 4 green apples (peeled, cored, and diced into .5 inch cubes)

  • 1.5 cup self rising flour

  • 2/3 cup sugar

  • 1.5 cup milk

  • .5 stick butter

  • 3 handfulls of butterscotch chips

  • 3 generous shakes of cinnamon

  • lemon juice from half a lemon

Directions:

In a saucepan bring water to a boil and then add the green apple cubes. Simmer with cinnamon, and lemon juice until all the water is evaporated. Preheat oven to 350 degrees Faranheit. Place butter on a square baking pan and allow to melt in oven. Meanwhile carefully mix flour, sugar and milk in a bowl, making sure to get rid of all the clumps. Take the pan out of the oven and pour the batter into it. I usually give the batter a couple stirs with a wooden spoon to mix the melted butter in evenly. Evenly scatter the cooked apples and butterscotch chips onto the batter. Return to oven and bake for 30 mins. It will be done when the top is starting to turn golden and you can pierce it with a table knife and have it come out clean.
